THAI FISH IN TAMARIND SAUCE Servings: 2 lbs. white fish fillets 2 T. oil 3 cloves garlic, minced 3 T. soy sauce 2 T. palm or brown sugar 1 T. fish sauce 1 tsp. tamarind concentrate, dissolved in 1/3 c. hot water 1 walnut-sized piece of ginger, minced 3 green onions, chopped Heat oil in large frying pan. Add garlic and ginger. Cook 1/2 minute. Add all liquids plus sugar, cook 1 minute. Add fish to sauce. Cook 4-5 minutes until fish is done. Serve on platter garnished with green onions.
